I ordered every flavor of the chocolate salami from Badelia's Uncommon Confections and brought them to my office to share. We served them sliced like traditional salami on a charcuterie board, paired with raspberry jam and Biscoff cookies — and they were an absolute hit.

A no bake confection made by combining melted chocolate, butter, sugar, egg yolk, cookie crumbs, and nuts.

Where did the name Badelia’s come from?

A mischievous childhood nickname for one named Amelia.

Is Badelia's chocolate salami vegan?

Badelia's chocolate salami is not vegan; we use pasteurized egg yolks and butter for texture and flavor.

Does chocolate salami have meat in it?

No, actually, chocolate salami is traditionally a dessert, served like charcuterie either in a log format and sliced as served or presented as slices.

Does it need to be refrigerated?

Refrigeration is recommended for shorter lengths of time. Frozen for longer storage. Serve at room temperature, wrap and chill leftovers.

What should I do if my chocolate salami gets warm in transit?

Try to keep chocolate salami in a dry cool environment during transit. But if it does get warm, it may also get a bit soft. It can be eaten this way, however to slice it, keep it wrapped and freeze or refrigerate it until it is firm enough to slice.

Does chocolate salami contain raw egg?

Raw eggs, no. Pasteurized egg yolks, yes. Pasteurization cooks the egg yolks but allows them to stay liquid which adds richness to the texture and flavor. 

What brand of chocolate does Badelia's use?

Currently, we are using Valrhona Chocolate. However, we are interested in working with Portland-made chocolate. *Wink Wink* 

Does chocolate salami make a good gift?

Absolutely, barring allergies. Chocolate salami makes a perfect gift for most foodies because it's unusual AND delicious. It's also low pressure because it can be put in the freezer to save for later, nibbled on and put away, or shared on the spot.
